Fabric born from an encounter with the real thing

gyouza

Have you ever eaten gyoza with delicious dough?
In Japan, gyoza means pan-fried gyoza, but in mainland China, boiled gyoza is more common.
Boiled dumplings are considered to be auspicious, and after eating them on New Year's Eve as toshikoshi dumplings, people would fry any leftovers the next day and eat fried dumplings.
Because North China is a cold region, rice does not grow there, so dishes using wheat flour as a staple food developed. In mainland China, especially in the northern regions, dumplings are a popular dish that is eaten as a "staple food" rather than a side dish.

We want to deliver "gyoza that's like a staple food, with delicious dough."
This is what we want to achieve.

For our Magical Fried Dumplings, we put our heart and soul into the flour we use to create each and every skin.
Our skilled craftsmen, some of whom hold the Chinese nationally certified title of "dim sum chef," carefully wrap each piece of dough, which is softer than an earlobe, to create the soft, chewy texture.
The balance of the dough and filling is in perfect proportion, making it a dish that can be enjoyed by people of all ages, not only as a main dish, but also as a side dish to go with alcohol, or included in children's lunch boxes.

The secret to the magic is the exquisite filling

"Magical Fried Dumplings"
It's a very strange name, isn't it?

You may be thinking that since it has the word "magic" in the name, there must be some secret behind it!
I'll tell you a little magic secret!
As mentioned briefly in the video on how to cook gyoza, the main ingredients of magical gyoza are the dough and the filling.
What really brings out the best in the dough is the exquisitely balanced filling.
This seasoning is made with an exquisite balance of pork from Kagoshima Prefecture, Chamiton, and vegetables, and was created through trial and error to maximize the flavor of the ingredients and the wheat.
Of course, we can make delicious gyoza by using high-quality ingredients, but that's not the kind of flavor we're looking for.

Once you eat one, your chopsticks will naturally reach for another, and before you know it, you'll be eating until you're full without getting bored. You'll want to eat it today, tomorrow, and always.

Our goal in creating such dumplings is to create these magical fried dumplings.
Our dumplings are made by experienced dim sum chefs using carefully selected ingredients that customers can eat with peace of mind, seasoned with simple condiments, and made with care.
Today, too, we lovingly handcraft them with the magic words, "I hope it's delicious."
